I was thinking about our five senses but there is one which brought me to think about it deeper. Can anybody guess which one it is?… I won’t let you guess any longer. I’m talking about the taste. What’s so special about it? Well, everybody knows the four  flavours  of the taste: sweet, salty, sour and bitter. But there is a fifth one called umami. What a weird name would you say! I do agree with you. It sounds japanese to me. And unfortunately for you it’s japanese. It’s exactely discovered by a japanese scientist named Kikunae Ikeda who boiled some seaweed (kombu)and noticed that the taste of it was distinct from sweet, sour, bitter and salty and named it umami. And it means ‘pleasant savory taste’. So if you want to try this new flavour you can find it in soy saus, kombu seaweed, shrimps, cabbage, shellfish, mushrooms, green tea…
